This was the toasted coconut cake from the last cake club meeting, consisting of members Kyle Minor and Jennifer Check. The bottom layer fell apart when we tried to turn it out, but the cake repaired pretty easily with the help of lots of frosting and coconut flakes. Previous cakes from cake club include the infamous black cake, strawberry ribbon cake and devil's food cake. Now that I am armed with the Cake Bible and heavy gauge nine inch cake pans, nothing can stop us now!


That was some goood cake. I can't wait for the next cake club meeting!

You bet that cake was good... I am desperate to re-create it, but w/o Jenny's touch, I'm afraid it will be so much less delicous! Nice hat I have, though, dontcha think?

I have since made this cake again... and it turned out GREAT again. Jenny's idea of lining the bottoms of the pans with parchment paper circles was a lifesaver. BTW... this cake keeps almost a week out of the fridge with barely an ill effect. YUM!

Can you get some bigger cake pans so there will be leftovers for us. Or maybe I can become an official taster since I HATE TO BAKE.
